When Gluten is combined with water and is cooked it is called Seitan, which has been used in Asian cuisine for centuries. Its first mention was in the 6th-century in China. While its origins are likely Chinese, the word “seitan” is Japanese.

Why?
The seitan is high in protein and low in fat.
100 grams of seitan contains around 75 grams of protein and 1.9 grams of fat. It also contains iron, fiber, and magnesium.
Seitan is very versatile because it can be used to form many vegan types of meat. It absorbs any seasoning and flavoring you add to it and its texture is meat-like.
It is important to mention that seitan is not suitable for coeliacs or people with wheat allergies.
