
Chilaquiles with Plant-based Cochinita Pibil
Mexican Chilaquiles?
They are perfect for breakfast!
Chilaquiles is a typical Mexican breakfast. It consists of Tortilla chips + Salsa + Protein + garnishes
The recipe is very simple:
1. Totopos: corn tortilla chips, fried or baked until crisp⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ ⠀⠀
2. Vegan cream and cottage cheese
3. Cochinita Pibil of Asanté
4. For the sauce: - 1 or 2 tomatos blanched (cooked and peeled) -
20 g white onion -
2 cloves of garlic -
1 tbsp of vegetable stock powder or salt
1 serrano pepper (you can add more)
*Blend everything and heat for 10 minutes before covering your tortilla chips ⠀⠀⠀
5. Add Asanté Plant-based Cochinita Pibil to the sauce
6. Serve the warm sauce and protein over the Totopos
6.- Add sliced avocado
